The ingredients needed to make Baked Samosa Candy:
- Take 200 gms all purpose flour
- Take 50 gms Ghee
- Prepare 10 gms Ajwain
- Get to taste Salt
- Get 1 teaspoon cumin seeds
- Prepare 4-5 curry leaves
- Take 250 gms boiled potatoes (diced)
- Make ready 40 gms peanuts (boiled/soaked and peeled)
- Prepare 2 teaspoon ginger garlic paste
- Make ready 1-2 green chillies
- Prepare 20 gms coriander leaves
- Take 10 gms coriander seeds (roasted)
- Get 1 teaspoon Garam masala powder
- Make ready 1/2 teaspoon turmeric powder
- Get 20 ml oil
Making the traditional crust from scratch is more tedious, so substituting the crust with tortillas will save. Spoon in the filling, brush the exposed dough with a little water, then fold over and press to seal. Place onto the prepared baking tray, then repeat with the remaining ingredients, keeping the samosas covered with a damp tea towel as you go. Baked Samosa made with whole wheat flour is a far healthier version of Punjabi Samosa which is deep fried.
Steps to make Baked Samosa Candy:
- Mix the flour, ajwain, salt in a bowl. Add ghee and rub in the flour to get a breadcrumb like consistency. The whole mixture should lump together when gathered.
- Add water little by little and knead to stiff dough. Cover the dough with a moistened napkin and keep aside for 30 minutes. In a mixer add coriander leaves, roasted coriander seeds, chilli's and grind them together.
- Heat oil in a pan. Add cumin seeds and curry leaves. Add grinded masala and ginger garlic paste. Add potatoes, peanuts, turmeric powder, garam masala and salt. Mix well.
- Divide the dough into round portions. Roll each portion of dough into a circle. On one side add potato mixture. Make little cuts on the other side. Add some water on the edge of the dough and seal it completely like candy.
- Repeat with the rest. Preheat air fryer at 180°c for 4 minutes. Lightly coat the fryer basket with oil. Keep the samosas in the basket and lightly brush with oil. Air fry at 180°c for 20 minutes or till crisp and golden.
- Serve samosas hot!!!!!with chutney….!!!!
For the Baked Samosa, i have rolled the outer covering thin. To instill a little crispiness i have added ½ tbsp of ghee to the dough Punjabi Baked Samosa. Baking takes a little longer but i believe it is worth every effort. Use little bit of water to seal the upper side of the samosa. Repeat the same procedure with all other balls.
