- Continue adding sugar and mixing until it is thick enough to spread and roll out with a rolling pin. Should be about as thick as making a pie crust.
- Spread potato mixture out on wax paper using powdered sugar to help ease of rolling out. Roll to about 1/4 inch thickness or less.
- Spread peanut butter over potato mixture to about 1/8 inch from all edges. Begin to roll up into a log.
- Wrap rolled log in wax paper and put in fridge to chill. At least one hour (longer is better)
- Cut into little "wheels", and enjoy!

This candy has all the characteristics of a truffle (round candy, sweet and creamy center) except it does not It's typically made with butter, cream cheese, sweetened shredded coconut, and powdered sugar (aka confectioner's sugar). All of these ingredients are mixed. It gets it name from the look of the candy. I have not tried this recipe myself.
